Tuna-Pineapple salad


9 days without classes. I just love sembreaks :)

To prepare the fridge for the sembreak hunger, I decided to make something easy but flavorful.

Here goes:

4 cups shell macaroni, cooked
1/2 cup chopped onion
439g pineapple tidbits, drained
220 ml all-purpose dressing
1/2 tsp salt
1/2 tsp pepper
420g tuna flakes in oil, drained
100g raisin
185g cheese

1. Combine macaroni, onion, raisin, cheese, and pineapple.
2. Add tuna and all-purpose dressing.
4. Toss.

Enjoy!!

Tuna flaked in oil Spring Rolls


Although we had a long weekend but I decided not to busy myself in the kitchen due to the many test papers that I need to check. I decided to cook something quick and easy but with a large quantity and an be reheated over and over.

And so I decided to cook spring rolls with a twist, tuna!

Here goes:

1 large can tuna flakes in oil, drained
2 tbsp oil
2 cloves garlic, chopped
1 onion, chopped
1 piece green tomato, chopped
1 100 g pack raisin
1 can green peas
24 pcs spring roll wrapper.

Heat oil, saute garlic, onion and tomatoes until soft. Add tuna, raisins and peas. Season with black pepper and cayenne pepper to taste. Cool. Wrap in spring roll wrapper and deep fry.

Serves 24.

As easy as that. Enjoy!!

Flaked Tuna Croquettes


Yesterday, I received my 1000 worth of gift certificate from Yummy magazine and I thought of celebrating. So I got hold of a Yummy recipe book and started scanning for something delicious to experiment this weekend. Among all those I like, I decided to make this one since it look easy.

Here goes:

1 big can of Century tuna flakes in oil
1 clove garlic, finely chopped
10 pcs baby potatoes, boiled, peeled and mashed
black pepper
cayenne pepper
3/4 cup milk
2 tbsp butter
2 tbsp chopped green onions
eggs

Procedure:

Saute the garlic and add fish. Season with black pepper and cayenne. Add the mashed potatoes and milk and cook until mixture is almost dry. Add the butter and the green onions and mix well. Shape into oval croquettes. Roll in lightly beaten eggs then bread crumbs, egg and bread crumbs again. Deep fry until brown.

Well, I thought this was easy and quick, but I lost the entire morning just to do this. Ugh!

Well, anyway, this is delicious.

Miracle Whip Crispy Fried Chicken


This is supposed to be crispy but look at what happened!!

Ugh! frustrating!

4 chicken thigh
1/4 cup water
2 tbsps tang pineapple
2 tsps salt
1 tbsps ground black pepper
2 tbsps soy sauce
80 ml Kraft miracle whip all-purpose dressing
2 cups breadcrumbs
cooking oil

1. Combine water, tang, salt, pepper, soy sauce, and our over chicken; marinate for 30 minutes.
2. Cover chicken pieces with all-purpose dressing and bread crumbs.
3. Fry over medium heat until golden brown, about 5 minutes.

Serves 4.
