Fiesta Maja


As I've said, something round!

Here's another round sweet thing :)

1 cup cooked red and green sago
1 can (234g) crushed pineapple, well drained
1/2 cup white sugar
1 cup coconut milk
6 tbsp cornstarch dissolved in 1/4 cup pineapple syrup
2 tbsp grated cheese (grate some extra cheese for the topping)

Combine all ingredients, except sago. Mix thoroughly until sugar is dissolved. Cook over medium heat for 2 minutes, stirring continuously until mixture thickens. Stir in sago. Pour over round pan, top with remaining grated cheese and chill.

Enjoy!

Note:
Something funny happened while I was making this. I was so engrossed on the New Year preparation that when I was mixing the cornstarch to the pineapple syrup I did not notice that I was holding the box of flour instead of cornstarch, What The!! hahahahaha......

Fruit Charlotte Crave


I've heard that to make your new year prosperous and fruitful, you need to prepare food that are round and it must me sweet, well, to make the year sweet as well :)...

Who doesn't want their New Year to be prosperous and sweet?

I decided to make something really sweet :)

Here goes:

1 cup sugar
2 sachet unflavored gelatin, dissolved in 1 1/2 tbsp water
1 big can fruit cocktail, drained (reserve syrup)
2 egg yolks
1 cup condense milk
1 can all purpose cream
14 pc broas

1. Boil 1 cup sugar, 1/2 cup fruit cocktail syrup and 1 cup water for 10 minutes. Pour mixture into gelatin and stir to dissolve. Set aside.
2. Combine yolks and milk. Simmer while stirring over medium heat until mixture thickens or coats the spoon. Add fruit cocktail and gelatin mixture. Cook for 2 minutes.
3. Stir in cream. Pour in a round pan lined with broas. Cover and freeze until firm.

Tuna Pina Toss


I decided to make this for a change!

After the feast, it's time to eat healthy. Well, except for the mayo :P

1 can (270g) pineapple tidbits, drained
1 can (184g) tuna chunks in brine, drained
1 cup whole kernel corn
2 pc bell peppers, diced
1/2 cup mayonnaise
3/4 tsp iodized fine salt
1/8 tsp pepper

1. Combine all ingredients. Toss lightly.
2. Chill until ready to serve.

Spaghetti


It is a family tradition that every evening of the 24th of December we all gather in my father's house and eat dinner together. For this Christmas, my mother decided to give me the task of cooking Pork Curry since my nephew love it. Since I have written about my Pork Curry experience already I decided to write instead about my Spaghetti experience.

Every Christmas time, the school I'm working with will always give a bundle of groceries to us. One of it are the main ingredients for making a spaghetti. So, I decided not to waste it and tried to make this recipe.

Here goes:

1/4 cup butter
1 tsp oregano powder
1/4 kilo ground beef
1/4 kilo ground pork
6 pieces hotdogs, cubed
2 cups spaghetti sauce
3/4 cup grated cheese
Ajinomoto Ginisa All Purpose Seasoning Mix to taste
300 grams spaghetti, cooked accroding to package directions

1. Saute beef and pork in butter. When brown, add hotdogs and spaghetti sauce.
2. Add the rest of the ingredients and mix with spaghetti sauce.
3. Sprinkle cheese on top.

Super Easy Mango Float


It's Christmas! The happiest time of the year. :)

For the occasion, I decided to prepare the easiest dessert in the book.

Here goes:

1 kilo mango, peeled and sliced thinly
1 small can condensed milk
1 pack all-purpose cream
1 pack Grahams cracker

1. Combine all-purpose cream and milk. Mix.
2. In a container, arrange Grahams. Top with mango slices and cream mixture.
3. Repeat procedure until all ingredients are consumed.

That's it!

Fish Kilawin


My mother asked me to pay our water bill today. This will be my first visit to the city's water district building and I'm a little bit excited to compare its system in terms of paying bills to the electricity's snail-style way.
I was impressed when I reached there because the system is very fast. The only setback are the employees working there. It seems they are too tired of their jobs that they can't help but snapped at the slightest mistake. They can't even find time to smile and greet their costumers.
Well, to lighten the mood, I decided to go directly to the wet market after paying the bills and try to cook up something nice for today's lunch.
Here goes:

1 100g radish, pared and cubed
1/4 kilo lean fish (tarogho, cut into cubes
1/2 cup vinegar
1 medium red onion, chopped
2 siling haba, seeded and sliced
1 tbsp minced ginger
2 stalks green onions, chopped
1 red bell pepper, chopped
6 siling labuyo, minced

1. Rinse and squeeze radish. Set aside. Soak fish in 1/4 cup vinegar for 30 minutes. Drain.
2. Ass the remaining vinegar and the rest of the ingredients. Season with 1/4 tsp iodized salt and 1 tsp sugar. Mix thoroughly, then chill for 1 hour of until ready to serve.

Pork Curry


Yesterday I bought carajay but was not able to eat it all so I decided to cook something wherein I can include this leftover. I so this recipe in one of my cookbooks and decided to try it.
Here goes:

1 tbsp cooking oil
1/4 kilo pork
1 tsp minced garlic
1 small onion, diced
1 pork broth cude
1 tbsp curry powder
1 medium eggplant, sliced into half-inch thick rounds
1 medium red bell pepper, cut into cubes
1 small can evap
1 tbsp chili sauce

1. Heat oil and saute pork with garlic and onions, pork broth cubes and curry.
2. Add eggplant and red bell pepper.
3. Pour in evap and season with chili sauce.

chili corn carne with pork and beans and hotdogs


For this weekend I wanted to buy a new condiment to add to my collection. So I chose a recipe that includes condiments that I still don't have. So, I've decided to try this.

Trust me, it might look gross but the taste great.
Meaning, I need to work on my plating :)

Here goes:

2 tbsp butter
200 grams ground beef
2 tbsp kikoman soy sauce
2 tbsp hot and spicy ketchup
1/2 tsp cumin powder
salt and pepper for seasoning
1 big can pork and beans
6 jumbo hotdogs
1 medium onion, chopped
2 tbsp pickle relish

1. Melt butter in a pan. Add ground beef, soy sauce and ketchup. Stir fry until cooked.
2. Add cumin and season very well.
3. Pour pork and beans and hotdogs and simmer for 5 minutes.

*Cumin smells like an armpit with bad smell* Hahahahaha... :D

Fiesta Potato Salad


Would you believe there are still a lot of fiesta leftover in the freezer? Wow, the fiesta is like so long ago :)

I decided to make salad instead since I am already fed up with the meat I've been consuming since the fiesta.

Let's go healthy today :D

Here goes:

1/2 kilo potatoes, cut into cubes
1/4 kilo baguio beans, each cut into 6
1 cup cooked green peas
1 each red and green bell peppers, cubed
439 g pineapple chunks, drained (reserve syrup)

Dressing:
200 g pouch mayonnaise
1 tbsp calamansi juice
1 tbsp pineapple chunks syrup
1 small red onion, chopped

Boil potatoes in 4 cups water with 1 tsp iodized salt until just tender. Add baguio beans and simmer for 2 minutes before adding green peas. Drain, pouring hot water on bell pepper to blanch. Combine with the rest of the ingredients. Chill.

Makes 8 servings.

Tuna Primavera


Fiesta!

My contribution to our fiesta celebration is this recipe.

I hope it will turn out okay! @-@

Here goes:

400 g spaghetti, cooked per package direction
8 cloves garlic, crushed
1 1/2 tbsp margarine
2 small carrot, diced
2 pouch (250g) Italian style spaghetti sauce
1 1/2 cup evaporated milk
grated cheese
2 cans (180g) tuna flakes in brine, drained
1 cup cooked green peas

1. Saute garlic in margarine. Add carrot. Cook for 2 minutes. Add Spaghetti sauce and remaining ingredients. Season with salt and pepper to taste. Simmer for 10 minutes.

2. Pour over or mix with cooked spaghetti.

Maja Blanca

Well, I wasn't contented with the tiramisu, especially that I haven't tasted it yet, so I decided to grab a box of Cream cornstarch and look at the recipes at the back.

I saw this recipe and I got started with my experiment number two for my mother's birthday desserts! :P

Here goes:

1 cup cream cornstarch
1 1/2 cup cream corn
1 cup sugar
2 1/2 cups thin coconut milk
1/2 cup evap

In a saucepan, combine the cream corn with cornstarch, sugar, coconut milk, and evap. Cook over medium heat until thickened, stirring constantly. Pour into containers and cool until set.

Chocolate Graham's Tiramisu

Today is my mother's birthday and tomorrow will be our city's fiesta. My mother asked me what dessert I'll make and I told her I'll make tiramisu.

She asked if it's delicious. I answered 'maybe'. Well, this is my kitchen experiment so how will I know if it's delicious, right?

I need to make it first. :P

So, here goes:

18 pcs MY San Grahams chocolate
1/2 cup confectioner's sugar
2 tbsp sugar
225 g Magnolia Cream Cheese
1/2 cup coffee mixture (1 tsp coffee + 2 tsp sugar + 1/2 cup water)
1 box all purpose cream
2 tbsp cocoa powder

1. Mix - In a bowl, mix cheese and confectioner's sugar until light and fluffy. In a separate bowl, whip all purpose cream until double in volume. Put whipped cream in cheese mixture. Blend well.

2. Dip - In a bowl, combine coffee mixture and sugar. Dip graham in the mixture.

3. Layer - In a serving dish, lay 6 pcs of soaked crackers. Spread 1/3 of cream mixture evenly. Make 2 more layers using the soaked crackers and remaining cream. Garnish top layer with cocoa powder. Chill before serving.

Makes 8 servings.

Tuna-Noodle Bake


For this weekend, I decided to test if our oven toaster is still working. I chose a recipe that needs to be baked.

As you can see in the picture, the one at the bottom is kind of burnt. That is the bad effect of using an oven toaster. The more you toast, the hotter it gets. The succeeding food to be toasted must be given a short toasting time or it will end up like that.

So, here goes:

300 g Macaroni, cooked per package directions
6 cloves, garlic, crushed
1 185g tuna chunks in vegetable oil
1 250 g Italian Style Spaghetti Sauce
grated cheese

White Sauce:
2 tbsp flour
1/4 cup evaporated milk
1/4 cup water
1 tbsp butter

1. Saute garlic in tuna oil until brown. Add onion and cook for minute. Add Spaghetti Sauce, 1/2 cup water, 1/2 tsp iodized salt, and 1/4 tsp pepper. Simmer for 5 minutes. Add tuna chunks. Stir once. Set aside.

2. White Sauce: Mix all ingredients until smooth. Season with 1/3 tsp iodized salt and 1/4 tsp pepper. Cook over low heat for 5-10 minutes or until thick.

3. Blend spaghetti-tuna sauce with cooked macaroni. Arrange in pan. Pour white sauce all over and sprinkle with grated cheese. It desired, bake until cheese melts.

Makes 6 servings.

Pineapple Meatroll


My mother asked me to make the Easy Embutido on her birthday. But I am not yet convinced with the taste of that embutido. So I decided to look for another recipe which might be more delicious than the first one, and I have thought of making this.

Ingredients:

1 (234g) Del Monte Fresh Cut Pineapple Tidbits, well-drained
1 pc egg
1/4 kilo ground pork
1 piece beef broth cube, crumbled
2 pieces sliced bread, diced, submerged on
1/4 cup evaporated milk
1 piece red bell pepper, chopped
1 piece medium onion, chopped

Procedure:
1. Combine all the ingredients. Season with 1/4 tsp iodized salt and 1/8 tsp pepper. Mix thoroughly.

2. Divide the meat mixture into three. Wrap individually with a thin foil. Steam for 1 hour.

Easy Embutido Surprise


Early this morning I went to NORECO to pay the bills. I wasn't really planning to cook something today because I thought of checking those loads of paper on my desk. I decided to stop by Negros Lechon Manok to buy Pancit Canton for lunch but found out that it was close.

My feet took me to the public market thinking that there'll be a lot of fishes for sale. Faith was against me again. I didn't find any fish that suites the recipe in mind, which is what I've already featured here, Homemade Spanish Sardines.

Again I urge my feet to go to Fortune Mart and do some grocery shopping instead. There, I thought of checking the recipes I stored in my cellphone and found this recipe.

For today, November 2, 2011, I decided to put my hand on this recipe. This is the first time I'll make an embutido and was crossing my finger the entire time I was making this.

Here goes:

1/4 kg ground pork
3 hotdog, sliced into half
1/3 cup breadcrumbs
1/4 cup Cook and Dip Catsup Blend Spicy Chili
1/2 tsp liquid seasoning
1/4 cup Lady's Choice Tuna Spread
1/2 tsp salt
3 hard-boiled eggs
1/4 cup carrot, finely chopped
1 35 g Eden Cheese, grated
1/4 tsp pepper

Combine ground pork, carrot, cheese and breadcrumbs. Add tuna spread, ketchup, liquid seasoning, salt and pepper. Mix well. Divide the meat mixture into three. Place meat mixture on a foil and shape into a roll. Arrange egg in the center and hotdogs on both ends of the egg. Cover with meat mixture. Wrap securely in foil. Steam for 30-40 minutes. Chill before slicing.

Makes three rolls.

Tuna-Pineapple salad


9 days without classes. I just love sembreaks :)

To prepare the fridge for the sembreak hunger, I decided to make something easy but flavorful.

Here goes:

4 cups shell macaroni, cooked
1/2 cup chopped onion
439g pineapple tidbits, drained
220 ml all-purpose dressing
1/2 tsp salt
1/2 tsp pepper
420g tuna flakes in oil, drained
100g raisin
185g cheese

1. Combine macaroni, onion, raisin, cheese, and pineapple.
2. Add tuna and all-purpose dressing.
4. Toss.

Tuna flaked in oil Spring Rolls


Although we had a long weekend but I decided not to busy myself in the kitchen due to the many test papers that I need to check. I decided to cook something quick and easy but with a large quantity and an be reheated over and over.

And so I decided to cook spring rolls with a twist, tuna!

Here goes:

1 large can tuna flakes in oil, drained
2 tbsp oil
2 cloves garlic, chopped
1 onion, chopped
1 piece green tomato, chopped
1 100 g pack raisin
1 can green peas
24 pcs spring roll wrapper.

Heat oil, saute garlic, onion and tomatoes until soft. Add tuna, raisins and peas. Season with black pepper and cayenne pepper to taste. Cool. Wrap in spring roll wrapper and deep fry.

Serves 24.

As easy as that. Enjoy!!

Flaked Tuna Croquettes


Yesterday, I received my 1000 worth of gift certificate from Yummy magazine and I thought of celebrating. So I got hold of a Yummy recipe book and started scanning for something delicious to experiment this weekend. Among all those I like, I decided to make this one since it look easy.

Here goes:

1 big can of Century tuna flakes in oil
1 clove garlic, finely chopped
10 pcs baby potatoes, boiled, peeled and mashed
black pepper
cayenne pepper
3/4 cup milk
2 tbsp butter
2 tbsp chopped green onions
eggs

Procedure:

Saute the garlic and add fish. Season with black pepper and cayenne. Add the mashed potatoes and milk and cook until mixture is almost dry. Add the butter and the green onions and mix well. Shape into oval croquettes. Roll in lightly beaten eggs then bread crumbs, egg and bread crumbs again. Deep fry until brown.

Well, I thought this was easy and quick, but I lost the entire morning just to do this. Ugh!

Well, anyway, this is delicious.

Miracle Whip Crispy Fried Chicken


This is supposed to be crispy but look at what happened!!

Ugh! frustrating!

4 chicken thigh
1/4 cup water
2 tbsps tang pineapple
2 tsps salt
1 tbsps ground black pepper
2 tbsps soy sauce
80 ml Kraft miracle whip all-purpose dressing
2 cups breadcrumbs
cooking oil

1. Combine water, tang, salt, pepper, soy sauce, and our over chicken; marinate for 30 minutes.
2. Cover chicken pieces with all-purpose dressing and bread crumbs.
3. Fry over medium heat until golden brown, about 5 minutes.

Serves 4.

Painangat na Alumahan


Recently, I got hooked on buying Yummy magazine. Aside from the magazine, there is also a collection of all recipes of this magazine.

One of these is a recipe book entitled Filipino favorites. In it is this recipe that I would like to try this weekend.

Here goes:

500 grams whole striped mackerel, cleaned and washed
salt and pepper
1 2/3 cup diced tomatoes
1/2 cup sliced kamias
3 red onions, sliced
3 finger peppers, sliced
4 pcs siling labuyo
1/2 teaspoon whole peppercorns
1 1/2 tbsps soy sauce

1. Cut two slits on each side of all the fish. Season with some salt and pepper; let stand for 5 minutes.

2. In a saucepan, spread the diced tomatoes evenly on the bottom. Top with kamias, onions, peppers, peppercorns, and patis.

3. Arrange the fish over the kamias mixture then cover pan and put over medium heat. Simmer for 10 to 15 minutes. Season with some salt and pepper.

Chicken in Creme

It's the weekend once again. It seems my mother knows I'll be experimenting every weekend 'coz she wouldn't cook anymore ;)

For this weekend, I decided to cook veggies but with a twist. I opened my Del Monte Cookbook and found just the right recipe.

Here goes:

380g chicken breast fillet, cut into chunks
1 can (439g) Del Monte Fresh Cut Pineapple Tidbits, drained (reserve syrup)
2 pcs small carrots, sliced
100 g Baguio beans, sliced

Sauce:
3 tbsp margarine
2 tbsp flour
1/2 cup evaporated milk, diluted in 1/4 cup water
1 pc egg, slightly beaten
1/8 tsp paprika

1. Marinate chicken in pineapple syrup, 1/4 tsp iodized salt, and 1/4 tsp pepper for 30 minutes.

2. Sauce: Melt margarine over low flame. Turn off heat. Add flour, then add milk mixture gradually, stirring continuously until smooth. Mix a little of the flour-milk mixture to egg, then return to pan. Add paprika. Cook over low heat with constant stirring until slightly thickened. Set aside.

3. Drain chicken. Saute in oil until half done. Add carrot, Baguio beans and pineapple. Season with salt and pepper. Cook for 3 minutes. Add sauce. Cook for another 2 minutes.

Makes 6 servings.

Fiesta Fruit Wiggle









Weekend! Time to try something new.

Since the fridge is full of the food I tried to cook this month, I decided to try dessert this time.

Here's what you need:

1 piece green gulaman, shredded
1/3 cup evaporated milk
1/4 cup sugar
1 439 g fruit cocktail, drained
1 pack all-purpose cream, chilled
1/4 cup sweetened condensed milk
1 pack grated cheese

Here's how:

1. Boil 1 2/3 cups water. Add shredded gulaman and cook for 3 minutes. Strain into pan (square or round). Stir in evaporated milk and sugar. Cool and chill until set. Cut into desired shapes.

2. Combine with fruit cocktail, cream, and condensed milk. Toss lightly. Top with grated cheese.

Enjoy this delicious, easy to make recipe.

Homemade Spanish Style Sardines


I got this recipe from Yummy's September issue!

1/2 cup salt
3 1/2 cups water
1/2 kilo fish, cleaned, scaled, and with heads and tails cut off
1 carrot, sliced into rounds
1/2 of the 135 g bottle sliced pickles
1 bay leaf
1/2 tbsp peppercorns
pinch of salt
1/2 cup olive oil (add more if needed)
100 g tomato sauce
1 1/2 tbsp soy sauce
7 pcs siling labuyo

1. Combine salt and water. Soak cleaned fish for 10 to 15 minutes and drain.
2. Arrange fish in a pot. Add the rest of the ingredients.
3. The amount of liquid should be enough to cover the ingredients. Add more oil if necessary. Cook for 45 minutes to 1 hour until fish is tender.

Chicken Salpicao


No electricity today! Ugh! Frustrating.

Instead of feeling down due to frustration, I decided to cook this recipe instead. Well, mainly to keep myself busy and forget the heat!

480 g chicken fillet, cut into 1/2" chunks
3 large squares tokwa, cut into 1/2" chunks
1 pork bouillon cube, crumbled
1 tbsp Worcestershire sauce
1 head garlic, crushed
a large onion, sliced
200 g tomato sauce

1. Marinate chicken and tokwa in 1 tsp calamansi juice, bouillon cube, Worcestershire sauce, 1 tbsp soy sauce, 1/8 tsp pepper, half of garlic, and tomato sauce for 10 minutes. Brown chicken and tokwa pieces in 1/4 cup oil. Set aside.

2. Saute remaining garlic and onion. Add marinade and 1/2 cup water. Cook for 2 minutes. Add chicken and tokwa.

Herbed Chicken Pasta


I got this recipe from Del Monte's cookbook. It's very delicious.

250 g spaghetti, cooked
10 cloves garlic, crushed
3 tbsp. butter
200 g chicken breast fillet, cut into cubes
1 pack 380 g spaghetti meat sauce
2 pcs laurel leaves
1 1/2 tbsp rice wine
1 pc red bell pepper. cut into cubes
1/3 tsp dried basil
1/4 cup grated cheese

1. Saute garlic in butter until brown. Reserve half. To the remaining half, saute chicken for 5 minutes. Add spaghetti sauce and remaining ingredients except basil and cheese. Simmer for 3 minutes.

2. Add basil. Allow to simmer. Mix with cooked spaghetti, cheese and reserved fried garlic.

Beef and Cheese Macaroni


200 g macaroni, cooked
4 cloves garlic, crushed
1 small onion, sliced
1/4 kg ground beef
1 pouch (250g) Sweet style spaghetti sauce
3/4 cup cheese spread

Saute garlic, onion and beef. Cook for 10 minutes. Add 1/2 tsp. iodized salt, 1/8 tsp. pepper and spaghetti sauce. Allow to simmer.

Mix with cooked macaroni. Pour cheese spread and mix while pasta is hot.

Tuna patties


I got this from Quickfire!

If there's something I love about Quickfire, it's the quickness of how you prepare each of their recipes.

Here goes:

2 small cans of tuna flakes in oil
2 pcs eggs
4 pcs spring onions
maggi magic sarap
breadcrumbs

Combine all ingredients in a bowl. Put a dash of dried basil leaves and cayenne pepper. Form into patties and fry.

That's all.

Avocado Slice


Today is July 31, the last day of the Nutrition Month. Almost all schools celebrated this event in every school year. Our school is not an exception. Two to three weeks ago, we had "Paunay" in school (this is selling of home grown products) and one of my students approached me after my class and asked me if I would like to buy some fruits. Well, I'm not a fruit lover, much more of a junk lover, so I asked what were the fruits they were selling. She named a list and my eyes picked the word "Avocado, 20 pesos per kilo." What? 20 pesos only? (Well, as I've said, I'm not a fruit lover and thus I thought this fruit is supposed to be expensive). So, I told her I'll buy one kilo.
Lunch time that day, I saw a plastic bag on my cubicle with my name on it plus the amount 20 pesos. Well, this must be it. (Mind you, I didn't pay for the avocado yet). When I touched the bag I discovered how hard the avocado is. Is this fruit supposed to be hard?? Then I found out it wasn't ripe yet. Frustrating but no complain, remember, I haven't paid it yet.
Three days passed and I forgot about the avocado. Finally, Thursday came and I noticed the bag was moist. I touched the avocado and (like magic!) it was ripe already, hahahaha... plastic bag are the most effective way to ripen the avocado, that I have discovered!!
I brought the fruits home and was very proud to show it to my mother. But, she said, "Avocado makes your cholesterol go up!" Meaning, she will not eat it!!
What am I supposed to do with it?
So, I grabbed my collection of recipes and searched for one that will get rid of these avocados. And, here it is:

Crust:
1 (200g) crushed Graham
1 225 g Buttercup Rich-Tasting Margarine, melted

Filling:
250 ml Alaska All-Purpose Cream
168 ml Alaska Condensada
3 avocados
pinch of salt

1. In a bowl, combine all ingredients for filling. Mix it well to fully combine. Set aside in the refrigerator to chill.
2. In a separate bowl, combine Graham and Buttercup Margarine until crumbly. Press into a dish using the back of a spoon.
3. Pour in prepared filling into the crust. Freeze for at least 1 hour before serving.

I guess I'm going to love this fruit after making this recipe :))

Lumpiang Isda


Today is Father's Day. Since I can't celebrate this day with my father (well, he's six feet under the ground), I might as well cook something that he would sure like.

Here goes:

1 tbsp oil
3 cloves garlic
2 small onions
1 can tuna flakes in brine, drained
1 medium carrot, chopped
25 pcs lumpia wrapper
1/2 tsp salt
1 pc egg
1/4 tsp black pepper
2 pcs chili pepper, chopped
1 cup oil for deep frying

1. Heat oil. Saute garlic and onions. Add tuna flakes.
2. In a bowl, mix sauteed tuna, carrots, salt, egg, pepper, and chili pepper.
3. Put a tbsp of fish filling on each wrapper. Roll and seal ends with water.
4. Deep fry. Put in paper lined platter to drain off excess oil.

Hotdog Omelette



For this week end I decided to make something easy since my niece (the one on the right side;
tired after our cooking session) wanted to help. Here we go:

2 pcs medium potatoes, cut into strips and fried
4 cloves garlic, crushed
1 pc medium onion, chopped
4 pcs regular-sized hotdogs, minced
1 pack 200 g original style tomato sauce
1 tsp hot sauce
1 pc medium red bell pepper, cut into strips
5 pcs eggs
1 small can evaporated milk

1. Beat eggs. Add milk and 1/3 tsp iodized fine salt. Cook eggs into an omelette. Try to retain the round shape. Transfer onto a plate.
2. Saute garlic, onions, hotdogs. Pour the tomato sauce and 1/2 cup water. Season with 1/4 tsp iodized salt, 1/4 tsp pepper, 1 tsp sugar, and hot sauce. Add bell peppers. Simmer uncovered for ten minutes. Pour on top the omelette and top with fried potatoes.

Serves 8.

Baboy with the Asignar's Bagoong


The weekend before classes starts. Ugh! Frustrating. I don't want to go back to school yet.
How come students get so excited at the start of the school year? Well, teachers are not excited, except for the pretentious ones :P
Well, to boost my spirit before the start of the school year, I decided to cook something that I love to eat when I was small but wasn't able to eat after my father's death since my mother decided to go for a healthier lifestyle and refused to cook this recipe.
Well, my recipe includes the Asignar's bagoong which is really delicious, trust me! Without this bagoong, this recipe will not work out :D

Here goes:

4 slices of pork kasim
4 cloves garlic, crushed
1 small onion, sliced
1 tbsp ginger strips
50 g tomato paste
4 tbsps bagoong
1 pc siling haba, sliced

Heat 3 tbsps oil, then brown the pork chunks. Set Aside.
Saute garlic, onion, ginger, tomato paste, bagoong, siling haba and pork chunks. Add 1/2 cup water. Simmer for 20 minutes or until pork is tender.

And it's done!

Can you smell that? delicious!!!

Hawaiian Wanton








Another weekend... another
brainstorming to do... what am I going to cook this time???

I was browsing through my recipe book the entire friday night.

Guess what? I decided to cook this recipe.

This is one easy recipe to make, but takes long to prepare and will cost a lot of money especially if you have none of the ingredients in your cupboard.

Here goes ...

You'll need:

1 pack (100 pc) wanton wrapper

For the filling:

1/4 kg ground pork
100 g singkamas, chopped
2 cloves garlic, minced
2 tbsp flour
3 stalks green onions, chopped
1 can (234 g) crushed pineapple, drained (reserve syrup)

Combine all ingredients for filling. Season with 2 tbsp soy sauce and 1/8 tsp pepper. Mix well. Place every tsp of mixture in wanton wrapper. Moisten edges with water. Fold to form a triangle, then press edges together. Drain on paper towels. Set aside.

Sauce:

1/4 cup ketchup
1/4 cup red cane vinegar
1/2 cup sugar
2 tbsp cornstarch, dissolved in 1/4 cup water
reserved pineapple syrup

Combine sauce ingredients in a saucepan. Add 1/3 iodized fine salt. Simmer until thick. Serve with fried wanton.

Makes 7 servings.

Ham and Macaroni Salad


It's the weekend ones again and it's time for me to cook another recipe. I hope this will be perfect.
May 21 is the birthday of my nephew, the last day for my research class (meaning final exam), and the "End of the World" (which will end at six in the afternoon [I'm writing this blog May 22 at 8:10 in the morning, ironic! :) ] ) according to one religious group.
I started the day with a co-teacher in Jollibee (we had breakfast), after which we took the mind wracking research test. With everything done, I went to the grocery store to buy the things I need for my weekend project: salad.
Since there are many food at home due to my nephew's birthday, I decided to make a salad.

These are the things I need:

200 grams salad macaroni, cooked
1 medium onion, chopped (with the help of my niece, Julinne)
2 pieces red bell peppers, chopped (again with the help of my niece, Julinne)
234 grams pineapple tidbits, drained
220 grams all-purpose dressing
35 grams grated cheese
200 grams cooked ham

Here's how:
1. Combine macaroni, onion, bell peppers, and pineapple.
2. Add ham and all-purpose dressing. Mix well.
3. Add grated cheese.

Serves 4.
Total expenses: 145.25 pesos.

Chili Chicken with Black Beans


For this weekend, I decided to make something from my Chicken recipe book. Well, since this is the first time I'm going to cook chicken, it should be something easy as well. I went to the grocery store early this morning (would you believe the store wasn't even open yet when I went there??? :)) to buy the things I'll need for today's cooking adventure. These are the ingredients I bought at that very early hour:

3 pieces small chicken breast fillet halves, sliced into 1/2" strips
2 tbsps Maggi Savor Classic
2 tbsps cooking oil
2 cups chopped tomatoes
1 chicken broth cube
1 tbsp chili sauce
1/4 cup water
1 1/2 cups cooked black beans, drained

After getting all these ingredients, I went home and started cooking.

Here's how:
1. Marinate chicken in Maggi Savor for at least 10 minutes. Set aside.
2. Heat oil and stir-fry tomatoes until limp.
3. Stir in broth cube, chili sauce, and chicken with marinade; cook until chicken is lightly browned.
4. Pour in water. Let simmer and add cooked beans
5. Serve lukewarm with rice or pasta.

Serves 4.

Potato and Fish Crunchies


I wasn't able to cook much this summer since I started going back to school and hopefully finish my M.A. in History. So I vowed that as soon as I'm done with my summer classes I'll go back to exploring my recipe book and continue learning how to cook. Last Saturday I decided to get started and here's what I've cooked:

Ingredients
3 pieces small potato, peeled and diced
1 piece medium carrot, peeled and diced
1 can flaked tuna in vegetable oil, drained
1 1/2 cups breadcrumbs
1 small can evaporated milk
1 piece egg, slightly beaten
1 cup vegetable oil
salt and ground black pepper to taste

Here's how
1. Boil the potato and carrots until tender. Pork mashed in a bowl.
2. Stir in flaked tuna, breadcrumbs, evaporated milk and egg. Season with salt and pepper.
3. Shape into patties and fry in hot oil until brown.
4. Drain on paper towels and serve hot.

Serving 8-10.

Ground Pork and Beans


I love pork and beans. The only problem is, it is canned. My mother will always tell me not to eat canned food often for it has a lot of preservatives. But I Love Canned food! What am I going to do?
Yesterday, I went to the market to buy some flowers for my father and I saw this old woman selling some cooked white beans. When I passed her she asked me if I want to buy some. Me and my good-heart-for-old-people fell for it and bought 10 pesos worth of her white beans.
Well, this is what happened to it. My own version of pork and beans.

Ingredients:
2 cups of white beans, cooked
4 cloves garlic
1 medium onion
1 tbsp oil
250 grams ground pork
1 small pack of tomato sauce

1. Cook garlic and onion.
2. Add ground pork.
3. When pork is already brown, add beans and tomato sauce.
4. Season to taste.
5. Simmer for a few minutes.
