Fiesta Maja


As I've said, something round!

Here's another round sweet thing :)

1 cup cooked red and green sago
1 can (234g) crushed pineapple, well drained
1/2 cup white sugar
1 cup coconut milk
6 tbsp cornstarch dissolved in 1/4 cup pineapple syrup
2 tbsp grated cheese (grate some extra cheese for the topping)

Combine all ingredients, except sago. Mix thoroughly until sugar is dissolved. Cook over medium heat for 2 minutes, stirring continuously until mixture thickens. Stir in sago. Pour over round pan, top with remaining grated cheese and chill.

Note:
Something funny happened while I was making this. I was so engrossed on the New Year preparation that when I was mixing the cornstarch to the pineapple syrup I did not notice that I was holding the box of flour instead of cornstarch, What The!! hahahahaha......
