Fiesta Potato Salad


Would you believe there are still a lot of fiesta leftover in the freezer? Wow, the fiesta is like so long ago :)

I decided to make salad instead since I am already fed up with the meat I've been consuming since the fiesta.

Let's go healthy today :D

Here goes:

1/2 kilo potatoes, cut into cubes
1/4 kilo baguio beans, each cut into 6
1 cup cooked green peas
1 each red and green bell peppers, cubed
439 g pineapple chunks, drained (reserve syrup)

Dressing:
200 g pouch mayonnaise
1 tbsp calamansi juice
1 tbsp pineapple chunks syrup
1 small red onion, chopped

Boil potatoes in 4 cups water with 1 tsp iodized salt until just tender. Add baguio beans and simmer for 2 minutes before adding green peas. Drain, pouring hot water on bell pepper to blanch. Combine with the rest of the ingredients. Chill.

Makes 8 servings.
